Banana cake Easter 2010

We had a lovely family Easter, both the children were home plus Bobbin (dog). Alice and I baked, knitted, crocheted, made organza flowers and shopped, a bit of mum and daughter bonding. This is the recipe for the Banana Cake we made for Easter, this recipe is great if you want to use up very ripe bananas. For the topping we melted chocolate then decorated it with chocolate animals and Maltesers.

BANANA CAKE

Oven temperature 180C (350F, Gas 4)
Grease a 20cm (8in) deep round sprung cake tin 

  1. 125g/4oz of butter 
  2. 185g/6oz caster sugar 
  3. 2 eggs 
  4. 185g/6oz self raising flour 
  5. 1 tsp bicarbonate of soda 
  6. 3 small very ripe mashed bananas 

In a mixing bowl cream together butter and sugar. 

Beat in the eggs one at a time 

Beat in mashed bananas 

Sieve flour with bicarbonate of soda and fold into mixture 

Spoon mixture into cake tin

Cook in the oven for 50 minutes

Test the cake just before the end of cooking time, insert a metal skewer into the middle of the cake. If it comes out clean it's ready

Stand for 5 minutes before turning out onto wire cooling rack

 

Alternatively you could make muffins from the mixture. Change the oven temperature to 200C (400F, Gas 6) and cook for 15 minutes
